I like to cook. If I had more time, more counterspace, more patience...I think I might be good at it. I have lots of cookbooks, but everytime I try to do up some interesting looking meals during the week, I end up spending too much on ingredients I only use once, and spending too much time chopping and prepping and getting everything ready to actually cook. Not to mention the clean-up process. Ugh.
I find myself purchasing cookbooks like "The Six O'Clock Scramble" which was written for moms like me without alot of time but with finicky kids to feed. All sounds good in theory....but still hasn't solved my problem. We find ourselves turning to take-out food way too often, so I need to do something!
Places like Dream Dinners seem appealing... must try that. But in the meantime, I have resolved to cook but to do it my way and just accept that it will never be gourmet. Everything I make during the week will be 5 ingredients or less. The fewer the ingredients, the better. Kind of like college cooking. But for moms.
Monday: Grilled porkchops and a salad (2 ingredients!)
Tuesday: Pasta with vodka sauce and mushrooms (3 ingredients)
Wednesday: Salmon, couscous (with raisins) and a salad (4 ingredients!)
Thursday: Ground turkey with tofu and red pepper, rice (4 ingredients)
Friday: Frozen spinach pizza (counts as 1 ingredient to me since its all in a box)
There. I feel better. Please send me all your 5-ingredient or less suggestions please.

Chicken Adobo.
1. Chicken (try thighs and drumsticks for easiest and tastiest version) I like the skinless.
2. and 3. equal parts vinegar and soy sauce (usually 1 cup of each but depends on how much sauce you want)
4. couple cloves of garlic
5. bay leaf (optional)
6. Steamed Rice
Easy version: throw everything in a pot...let simmer for a while until chicken is cooked.
EASY and one of our favorites. If you want to get fancy add a fried egg on top.
